butter cake with milk chocolate icing

This baby... Is not your common cake. No, sir. This cake, it's one of a kind.

Honestly, this guy didn't come out as I intended him to. I set out to create a fluffy yellow cake to pair with creamy milk chocolate- ya know, the traditional birthday cake type. It came out quite different, but I'm seriously glad it did. I've never eaten a layer cake like this one.

It's dense. It's a mouthful. It's more like a pound cake than anything else. But it has icing, so it's better.

For the frosting, I chose to do a milk chocolate so the flavor would be light and the texture would be like... butter. Because it is. Basically a melt in your mouth type deal. I started by adding a melted milk chocolate Cadbury bar to the icing, and then to give it just a bit more of a chocolate punch, I melted some dark chocolate and added that in there too. The result is glamorous.

Honestly, I don't have a ton more to say about this little cake. It's really good cake. Make it. Put it in your mouth and eat it (Stranger than Fiction, anyone?).

Butter Cake with Milk Chocolate Icing

For the cake:
- 1 cup sugar
- 1 1/4 cup all-purpose flour
- 1/2 tsp salt
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1 egg
- 1/4 cup butter, melted and cooled
- 1/2 cup milk
- 1/2 cup very hot water

For the icing:
- 2 sticks of butter at room temperature
- 1 cup powdered sugar
- 3.5 oz milk chocolate (Cadbury is the only option, I mean really.)
- 1/2 cup dark chocolate
- 1/2 tsp vanilla

Preheat your oven to 350F please. Grease and line two 6" cake pans.

In a large bowl, mix together the sugar, flour, salt, baking powder, and baking soda. Add in the egg, melted butter, milk, and vanilla, and mix until just combined. Pour in the hot water and mix again until just combined. Be gentle, it's cake. Pour into the prepared pans and bake for 30-35 minutes, until the top of the cake just springs back when you press it with your finger. Cool completely.

For the icing, begin by melting your chocolate until it reaches a liquid consistency. Allow to cool a bit. When it's ready, beat the soft butter on high in a stand mixer. Add the powdered sugar, then slowly pour in the chocolate. Add the vanilla last. Wallah. Amazingly creamy milk chocolate icing.

Ice the cake. Stare at it. Eat it.
